Ube drinks
Ube coffee with espresso
Ube coffee is an iced latte in layers: purple ube mixture at the bottom, followed by cold milk and a shot of espresso, and topped with milk foam and a pinch of ube powder. The espresso adds bite, while the ube makes it smooth and slightly sweet.
The layers will only stay separate if you pour the espresso gently. Read the "Note" below to find out how.
Ingredients
- 2 to 2.5 g UBE.25 ube powder
- 20 ml hot water at approximately 80 °C
- 150 ml cold (plant-based) milk
- 1 shot of espresso, approximately 30 ml
- A glass full of ice cubes
- Optional: 2 tbsp frothed milk
- Optional: 1 tsp sugar syrup
Handig om te hebben
- A bamboo frother or milk frother
- An espresso machine or moka pot
- A short, wide glass
This is how you make it
-
Whisk the ube until smooth. Whisk the ube powder with 20 ml of hot water until it forms a smooth, deep purple paste. Use a bamboo whisk or a milk frother.
-
Pour the ube mixture into the bottom of the glass. Add the syrup if desired.
-
Fill the glass with ice cubes and pour the cold milk over them, up to about three-quarters full.
-
The layers. Prepare the espresso and slowly pour it over the back of a spoon onto the milk. This prevents the coffee from sinking through immediately and keeps the purple layer at the bottom.
-
Spoon on some frothed milk and dust with a pinch of ube powder.
-
Stir just before drinking.
Attention
Two things determine whether the layers stay separate. The espresso must be poured slowly over the convex side of a spoon, and the milk must be really cold. If you pour the espresso straight in, everything mixes immediately. Still tasty, just less pretty.
Variations
- Hot: leave out the ice and use hot milk. Then you have a hot ube cappuccino.
- Decaf: leave out the espresso and make the iced ube latte.
- With extra foam: replace the frothed milk with ube cold foam.
- Use syrup instead of sugar: it dissolves better in cold milk.
Does ube coffee contain caffeine? Ube powder itself is caffeine-free. The caffeine in this recipe comes entirely from the espresso, so it contains about as much caffeine as a regular coffee. If you want to avoid caffeine, choose the iced ube latte.
